Leaving Zermatt I head to Lake Geneva area for two nights. I was considering Vevey but I prefer to stay between Lausanne and Geneva. I will have most of my arrival day and the next whole day to enjoy before flying out of Geneva. Any suggestion appreciated!

Montreux to Geneva is only a 90 minute train ride, so I'd personally recommend staying there. But if you really want options west of Lausanne, then maybe Nyon. Morges or St-Prex.

Nyon is a nice town, my wife and I hike from the train station to the Hotel 16 eme. It's not fancy but reasonably priced and friendly. From Nyon, you could take the boat across to Yvoire, see the flowers, walk around the old town and eat filete de perche at the Le Pirate restaurant on the water.
Or take a boat or train to Castle Chillon near Montreaux.
