We will only have two or three nights in St. Moritz before we head back to Zurich for our flight home. Our flight leaves at 2PM Do you think it best to cut our time in St. Moritz to two nights and go to Zurich the day before departure or stay in St Moritz and train to Zurich the same day we fly home. Is it cutting it too close?

It's 3:45 from St Moritz to the Zurich airport. You can leave at 8 am and be there by noon. Swiss rail is very precise.

Although there's a slight risk, it should be possible to stay in St. Moritz on the last night and then take the train direct to the Zürich airport. I'd probably use the departure at 08:02, arriving at Zürich airport at 11:42 (time 3H:40M, 2 changes).
If you'd rather sleep in on the morning of your flight and have the opportunity to look around Zürich for a few hours, then staying in Zürich for the last night would be best. It's only about 10 minutes from the Zürich Hbf to the airport, so it would be a more relaxing choice.

Check to see what your airline's check-in time is for transatlantic flights departing from Zurich. Although I don't think that's a huge airport, 3 hours is what was recommended for my last four international flights. I certainly needed almost all of that at Barcelona last August. There's no way I'd schedule myself back to Zurich just a bit over 2 hours before my flight home, because I would not want to risk having to buy a replacement ticket.
