I'm not really good when it comes to remembering when snowy winter starts around here but beginning of December might cut it a little close.
As for a general overview of where you can go sledding in Switzerland look here. You can get snow reports on snow.myswitzerland.com. Here's a link stating the official season starts of various mountain ski resorts. Sledding runs are typically in lower elevations than ski runs so snow cover might not yet be reliable. And of course snowfall varies between years. For ski runs most resorts have installed at least some snow cannons. For sledding runs not so much.
