Skiing Zermatt in February

We are a family of 2 adults and 2 older teens. We are experienced and advanced but not expert skiers. We have skied Copper, Steamboat, But mostly ski east coast like Killington. I’m looking for advice on skiing in Zermatt. It’s difficult to judge how it will compare to skiing in the East.

Any advice or thoughts would be helpful- where to ski; what to avoid?
Any good rental shops or local instructors or ski guides to recommend?
How much colder or windier pistes will be compared to village?

If you are advanced and experienced skiers, You will absolutely love Zermatt. Quality of the snow will be bit better than US East, and not as good as Copper, but it is all about the completely different experience of skiing the Alps, and underneath the Matterhorn!

If weather looks favorable, Upgrade to lift tickets good for the Italian side as well. Fun, fun fun.

I cannot compare to the USA, but I spent a week skiing in Zermatt in 2013 and despite the cost, it was my best week of skiing anywhere by far (including other famous resorts like Val d'Isere). The scenery is hard to beat, lift lines were minimal (though this was March), food was excellent on the Italian side (expensive on the Swiss side).
I would recommend you aim to late Feb or even March if you can, as Zermatt is a rocky resort that requires large accumulation of snow to open 100% of terrain (although all advanced terrain should be open by mid January, some more "expert" areas typically open later). You'll also benefit from longer days and warmer temps.
