Looking for both not so expensive "supermarket buffet places" and places worth splurging at.

Pontresina: Kronenstubli, amazing experience, food and service.
In Lucerne, I like and recommend the restaurant in the Manor department store. It’s in the pedestrian zone of old town. Nice rooftop dining area for when the weather cooperates.
We also liked the Manor Department Store--had great lunch there on the rooftop terrace.

In Lausanne I enjoyed Chez Mario, which claims to be the oldest pizza restaurant in French-speaking Switzerland, and the Cafe du Simplon in rue du Simplon near the station.
Murren: the Chinese restaurant (yes, there's only one) in town was excellent.
