Where does one buy rescue insurance if a helicopter is needed to get one down from the mountain? How much does it cost?
What is the context? Is this for hiking or skiing/snowboarding? If for skiing/snowboarding, you can general buy insurance as part of your lift pass for a very small amount, like 2 or 3 CHF per day.
This is specifically for hiking. Not skiing, snowboarding or any other sport.

I know that Zermatt has their own service, Air Zermatt, but Rega says they cover other operators, like Air Zermatt.
