Question about travel to/from Junfraujoch

My husband and I are taking the family to Jungfraujoch next week—we have been before, but 15 years ago.

Questions:

—is it worth it to take the cable car to make a speedier journey?

—can you hop on and off the train without additional cost?

The Eiger Express is a very scenic ride. Depending on where you’re staying, do a loop in some form, kind of like this…
Grindelwald Terminal > Eiger Express > Jungfraujoch > Kleine Scheidegg > Wengen > Lauterbrunnen.

Once you get off the Cable car at Eigergletscher, you board the train and it makes one 5 minute stop at a small windowed glacier viewing point where you can choose to get off or stay on to wait, your choice. No extra cost. There is nowhere else to get off, unless you mean making stops at places like Kleine Scheidegg. In which, yes, you can stop for as long as you want.

I would indeed do the trip as suggested in the previous post: Up via the Eiger Express, and back via Wengen. That gives you the best views.

You can indeed make stopovers. My suggestion would be to start early in Grindelwald, take the eiger Express, and go up to the Jungfraujoch. On the way back get off at Eigergletscher and visit the restaurant there for lunch. Then continue via Kleine Scheidegg to Wengen. Have coffee or maybe an ice cream (on nice days David sells ice cream in front of the station). Then down too Lauterbrunnen, and then on to where you are staying...

Everyone seems to be assuming you are starting from Grindelwald. Is that the case?
