With a world class rail system, a car is an expensive nuisance in this beautiful country, and crossing borders adds another complexity. The rail stations are usually right in the middle of where folks want to go, and many villages are car- free zones.
Check out the RS Guide book suggested routes , and access the "Watch, Read, Listen" here on the Forum, which also includes suggested routes and helpful articles. Many of your questions are already answered.
Also, you are late to be booking accommodations. Many favorite places to stay are in the BO - Murren and Wengen.
Have a wonderful time in this beautiful country. Safe travels!
I would skip Interlaken/Berner Oberland and concentrate on hiking around Kandersteg/Valais and the Loetschental (isolated until the 1960's).
This area is beautiful. It even has it's own glacier- Aletschgletscher. Far LESS touristy AND has the black-nosed sheep.
Less overall time spent in transit, better chance to still secure lodging also.
I spent 2 weeks in Kandersteg 20 years ago.
Research its local lake Oeschinensee !
I would not rent a car either for Switzerland. Their rail system is world class and reliable. Combined with the post buses, cable cars, etc., you can get to some very small towns.
In Zermatt, the Julen Family has a black noise sheep farm. During the summer you can hike to see them and their shepherd. I do not know if you have to stay at one of their hotels to get the GPS coordinates for the sheep. I would contact them via email. We have stayed at two of their hotels and they are very nice. The Restaurant Schaferstube in the basement of the Julen Hotel is excellent. It serves typical Swiss dishes (raclette, fondue).
