My family is taking a 2 week car tour of Switzerland/Italy this July. We are flying into Zurich, and visiting Lucerne, Lake Como, Tuscany, Cinque Terre, and then heading north to Lauterbrunnen for several nights. Once we check out of our hotel in Lauterbrunnen, we have one full day and night before our flight out of Zurich the following day. I am looking for ideas of a town/interesting place to stay between the two.

The obvious choice is Lucerne, but not sure if you'll want to go back since you will have already been there. Any chance you can adjust your itinerary to head straight to lake Como then hit Lucerne after Lauterbrunnen? Or - depending on your flight time you could just add an extra day to Lauterbrunnen.
Bern. It will only add about an hour drive to your trip.
I absolutely second the call for Bern. Great Old Town and in July you might be able to take a float down the Aare river with the locals.
I third Bern, unless you want to add days to Luzern or Lauterbrunnen (which are wonderful) We enjoyed Bern. The old town area is picturesque and interesting. You may also want to check out the Einstein Museum at the History Museum (as opposed to Einstein's house which was closed when we visited) and the Switzerland Parlament building, the old clock tower and take note of all the interesting fountains including the "Baby Eater"
