Has anyone taken this day long train trip with hiking stops from Nice? I am especially interested if taken with kids that are 10-13 years old.

Are you referring to the Chemins de fer de Provence?
No, it is a tour from Nice, run by Creative Tours.
Reading the Creative Tours description, it looks like it does use the Chemins de fer de Provence. It is a small rail line that goes through the southern Alps far as Digne-les-Bains. You could do it on your own, but the tour includes a guide, a coupe of tours and a lunch.

I have not. It was shut down for maintenance when I was in Nice.

This is the so called "Train des Merveilles", or the Nice - Tende railway. This is a unique railway, as it is the only cross-alpine railway that is not electrified. It has been closed for some time, but is now reopening with the next timetable.
It is an interesting excursion, but you do not need to take an expensive tour for that. This is just public transit. You can buy a ticket, and just go. You will have to plan a bit around the available trains (it being France they do not exactly run often). What you can do however is a interesting circuit: Nice - Tende - Ventimiglia - Nice.
BLS (now we are talking Switzerland again) used to run special charters from Switzerland over that line to Nice. I hope they do that again when the line reopens.
I took that train back in 2017. It's a nice ride. One of the stops is at Entrevaux, a small medieval town. The day I went (the only free day I had), there was rain pouring down, so there was no one except me walking around Entrevaux. I assume that was unusual--though weekdays would probably be somewhat quieter in general. I think the children might get a kick out of Entrevaux. Digne-les-Bains is a spa town, and the train station is a bit of a walk from the center. I think it would be of less interest to the children, based on the little I had time to see.
It is true the train doesn't run often, so you need to look at the schedule carefully to figure out how to allow time actually to see something when you step off the train. I would prioritize time in Entrevaux unless someone else comes along with specific sightseeing suggestions in Digne.
Tickets on this train are fairly costly on a per-mile basis, so check fares before making a final decision.
Don't confuse the "Chemin de Fer de Provence" with the "Train des Merveilles". The tour the OP mentions is about the latter, not the former. Both make nice excursions though.
