I have tried recommended hotels including Chesa Milan, Hotel Bernina and Engadinerhof which are not open this time of year or are fully booked. We just need a one night stay for May 1, 2024. Any recommendations?

I've never been to Pontresina so I have no place to recommend, but I'd suggest checking booking.com. I see two hotels near the center of town, each with one room available for the night of May 1: The Hotel Station (rating 8.4) and the Hotel Steinbock Pontresina (rating 9.0). I find the reviews on booking.com generally reliable, because you can only review a property where you have stayed.
Definitely check the hotels' own websites to see whether you can beat the rates on booking.com.
If you don't like what booking has available, go to Google Maps, click on Nearby and choose Hotels nearby from the pop-up list. Click on the icons for the hotels whose locations you like; Google will include the hotel's website in the information displayed.

I believe some of the hotels mentioned may have a two or three night minimum.

I don't know if they have availability, but you are so close to the wonderful Romantik Hotel Muottas Muragl, high on top of a mountain, accessible only by funicular. It is an experience to remember!

We and our friends had wonderful 4 night stays at
Hotel Collina in charming and picturesque Pontresina. Hope they have room for you!

Thank you all for your recommendations! Very helpful as this is our first trip to Switzerland. I did check all the recommendations which were all amazing but some were already fully booked. We did get the last room available that will accommodate us at Hotel Steinbock.
