Need advice on upcoming trip to Switzerland (OB region) from 10/24-10/29

My husband and I are traveling to Switzerland to meet up with our daughters (18 and 25) and will be arriving in Zurich the morning of 10/24 and departing for Paris on 10/29. Planning to jump directly on a train from Zurich and planning to go directly to Lucerne to spend 1 night. Then we'd like to head to the OB mountain region and explore/hike Lauterbrunnen, Grindelwald First and Mannelichen and/or Schynige Platte. Would love recommendations on which places to go and where to stay! Was originally thinking staying in Interlaken would be best since there's easy access to trains and just do day trips to the other places, or possibly Lauterbrunnen. Sounds like a lot of people do not like Interlaken because it is too touristy. Can someone please give good advice on where to stay the last week of October based on what will be open, etc. and what to prioritize to see & do? We want to do some easy hikes (based on the weather), see the waterfalls in Lauterbrunnen, and experience a true Swiss village experience (but do not have to stay in a village, if that is not the best option), etc. Would like access to a supermarket or small store for food and more than 1 restaurant option. Am open to renting an AirBnB, chalet or booking a hotel that is not too crazy expensive (3 or 4 star, not 5). Any advice, suggestions, or itineraries are GREATLY APPRECIATED!!! THANK YOU!
