In June, I'm thinking of going from Milan (taking the Bernina Express) and home from
Zurich. How many days do I need? Any suggestions on where to stop? This will be the end of a month trip.

Varenna on Lake Como is right on the rail line to Tirano. That should be a pleasant stopover for however many days you choose. Chur, at the end of the Bernina Express is worth a day. Its only 1 hour and 37 minutes to the airport from there, with a change at Zurich Hbf.
You really want to do the Bernina Express on a good weather day, so Varenna could be place to wait for good travel weather.
