Why would the sbb.ch site be unable to sell me a train ticket from Luzern to Lauterbrunnen? When I try to book it, I get an error message which reads "Unfortunately, the ticket for this service is not available online. Please purchase your ticket locally."
Any guidance?

Check it in 3 days the tickets are only available up to February 25.

if you want the scenic route make it via Brünig or via Meiringen.
Otherwise you might get routed via Bern.
There is no need to buy a ticket in advance for this route. This is normal public transit, used by locals to go about their daily business. Do like everyone else: just buy the ticket at the station, and then take the train...
