We'll be traveling from Appenzell to Lauterbrunnen via Luzern on 7/11/17. We'd like like to go on a luge ride in Luzern. I believe the rides are at Mt. Pilatus and I'm wondering if you think there's enough time to do all this in a day? What is the travel like from Luzern to Mt. Pilatus - another train or ...?

I don't know about Luge rides in Luzern, but there is one near Lauterbrunnen.
From Laut., take a train to Grindelwald (train switch in Zweilutschinen). Walk thru Grindelwald until you see the cable car station that goes to Pfingstegg. At the top is a luge ride with fantastic views for a about $3 a ride.

My guess is that your day is pretty full already. Though it appears easy to travel to the luge run (bus and cable car), it looks like a 3-4 hour-ish round trip from Luzern. Just my guess.
I will be combining the luge run with the full trip up and down Mt. Pilatus.
