Looking for some non-hiking itinerary suggestions to supplement our hiking tour in July.

We are flying into Zurich, then going Lucerne for 2 nights, followed by Interlaken for 3 nights, and Montreux for 2 nights.
We have 6 more nights after Montreux and are looking for ideas on how to fill them.
We are planning to spend at least 2 nights in Bern and probably spend our final day in Zurich.
Is it worth adding Geneva with a day trip to Annecy?

If you want to see Annecy, I'd just stay there, not in Geneva. For 13 nights with a mix of hiking and other activities, perhaps something like....

Zurich Airport > Wengen 4-5 nights > Montreux 2-3 nights > Annecy 2 nights > Luzern 4 nights > Zurich Airport

From Luzern you can do day trips to Bern, Zurich, Lugano/Morcote, Stoos, villages along Lake Luzern, etc. without having to move bases so much. It's also a direct 1 hour train from the airport, so it's a good place to end. I'm assuming your plan is to do hiking when staying in Interlaken. If that's the case, I highly recommend staying IN the mountains instead. It will be a vastly different experience.

Staying in Interlaken would allow you to rent an electric bike and ride from Interlaken into the Lauterbrunnen Valley and back. The altitude increase is doable with the electric assist, or you could ride the train into Lauterbrunnen and rent a bike there to enjoy good weather riding around. When you get away from the main walkways and roads past Staubach Falls, it gets very quiet, and you really immerse yourself in nature.

Have a great trip! July can be warm, even on the mountain viewpoints, so dressing in layers is a must.
