Hi, We will be traveling to Italy in October and plan to spend 5 days in Varenna. Hoping to take a train ride from Tirano through scenic areas of Switzerland, have lunch and return the same day. The journey on the train will be the main attraction.

You probably want to ride the regional trains, which use the exact same tracks as the panoramic trains, have more stops, more flexible schedule .
We did the round trip once, and it was fantastic in both directions.

For scenery, I would say up to Morteratsch is best.
But you might as well go to Pontresina as there are more lunch options there. Or you could head to Muottas Muragl and have lunch at the top of the (expensive) funicular if you'd like: the views are amazing!

From Varenna you could als do the following circuit: Train to Tirano, train to St. Moritz. Bus to Chiavenna, Train back to Varenna. Makes for a nice varied day trip. And you can easily break the trip somewhere to go for a walk.
