We will be staying in Lauterbrunnen in early September for four days/three nights, arriving on train from Bern. Doing a bit of research on how best to plan our days there and in areas nearby. Can anyone tell me if there are castles to visit along the shoreline of Lake Thun that are open to the public, and the departure points on the boat line to visit the castles?

I'd generally head into the mountains on good weather days, saving castle sightseeing for poor weather days or travel days.
Thun is an easy stop on the train from Bern, and you can stay overnight in the Thun castle (Hotel Schlossberg). The Thun Panorama is especially interesting after you've explored the city.
On the other lake (Brienz), a boat ride and funicular lead to Grandhotel Giessbach and Giessbach Falls; that'd be another special place to spend a night. The jetboat rides from Interlaken are fun too.
