i have a 1 hour, 40 minute connection in Zurich following my flight from the US. Is that enough time? I have some mobility issues as well.

the airport suggests at least 60 minutes but your airline is really where you should be asking. If this is through ticketed and any checked luggage is also tagged for the whole journey the airline wouldn't sell the ticket with a transfer which is too short. If you bought seperate tickets 100 minutes is probably OK but nobody will give you a guarantee, especially with checked bags that need rechecking.
BUT before any of that, where is the onward destination? If origin and destination are both outside the Schengen zone and you have through (or no) checked luggage you don't need to go through passport control, so no EES.
