Fastest/least time train from Interlaken to _______, then flight to London?

Zurich. The travel time from Interlaken OST right to the airport is 2:16, with a single train change in Bern. Lots of flight choices to get to London.
Travel time to Basel is slightly less (1:59) but that is to the main train station. You would transfer to a bus or taxi to reach the airport.
Check flight times and prices to both and then decide.

Also possible to do this all the way by train: Interlaken to Basel, Basel to Paris Gare de Lyon, cross Paris by RER, Paris Gare du Nord to London St Pancras.
If you want to fly, Zürich is the easiest airport to get to, followed by Basel. Easyjet flies from both to assorted London airports.

We did this itinerary in reverse last summer and found the best connection was Gatwick, Easyjet to Basel Airport, bus to Basel, Train Basel Airport-Basel-Interlaken Ost. But much will depend on what time you are flying and how the airlines schedules may have changed.
An option we almost considered was London City Airport, Skywork Airline to Bern, but Bern Airport is not well served by public transport.
