We will be spending 4 nights in Interlaken in late May and are looking for hotel recommendations, preferably near the train station as we will be using it as a hub to do day trips by train. As we probably won't be going back anytime soon, I'd prioritize experience/quality over price (up to a point!)

Most any hotel in Interlaken will be very close either the OST or West stations.

And a good budget option is the Youth Hostel. Next to Interlaken Ost station, and has a pretty good bar/restaurant even.
(And even though they are a hostel, they do have single and double rooms).
