Curious if there are any interesting diversions or points of interests along the train route between Zurich airport and Appenzell? Ideally things that would be 1-2hrs tops. Thanks!

There is a museum in Urnasch that may be worth a visit:
Appenzeller Brauchtumsmuseum Urnäsch
We have not been there but it looks interesting if you want to learn about the area traditions/customs.
If that doesn't consume enough time, there is a metzgerei and a gelataria close to the Urnasch bahnoff.
