Older couple looking for authentic style, preferably historic, lodging in these areas. Traveling by train.

For an "authentic style" hotel in Appenzell, I would highly recommend the Adler Hotel - https://www.adlerhotel.ch/en/home/ . I've only travelled through the Upper Engadine so haven't stayed in any hotels in that area.
I found the room to be very comfortable, they served a nice breakfast and it was in the main part of town, only a short walk from the rail station.
