I have a reserved seat on the GPX leaving at 1108 from Interlaken Ost. I was wondering how easy it is to disembark from the Lucerne-Interlaken express and then to board the GPX.. My options are catching the 8 am train or the 9am train from Lucerne. Is 13 minutes plenty of time for me ( an old Lady with luggage) to find my way to the appropriate platform and board the GPX or
Is there enough to entertain me at the Interlaken Ost station for and hour if I catch the 8am train

You arrive on Platform 4. Assuming you have rolling luggage, take the ramp down to the crossover passage, walk about 10 meters (yds) to the ramp for Platform 7, then up to your train. Should take about 3 minutes.
Stations in Switzerland are not intended as places to hang around. We have short transfer times on purpose, to avoid wasting your time. So just take the train from Luzern that gives you the least wasted time in Interlaken Ost.
13 minutes is already long for a transfer...

I'm pretty conservation so I'd likely take the 8 a.m. out of Luzern. There are stores outside the Interlaken Ost station, including a Coop.
That being said, 13 minutes should be plenty of time to get to the platform for your next train. I sometimes have trouble with hip or knee pain. I have always been able to make what feels like a short connection time at Swiss train stations. I have a 24" backpack and a smaller backpack. Lately my husband likes to carry my big backpack as a piece of hand luggage. But for a long time, I carried it. We've never missed a connection in many trips to Switzerland over the years. If I were traveling alone, I would likely go to my next platform and people watch and/or read a book or just walk around for a while. I can't recall what food is available around the Interlaken Ost station, but if it were mid-day I'd try to find a bite to eat or pick up something to eat on the next train.

But if you take the early train, what do you do with your luggage? There are lockers at Interlaken Ost, costing 10 CHF and the size is 17.5" X 34.5" X 24" so make sure your bag will fit.

I’m thinking I will be brave and take the 9 am train from Lucerne and trust it won’t be an issue to find my way over to platform 7 . I am also thinking that the Golden Pass express to Montreux will probably be the only train on that track at that time. (11am). I am also hoping that there will be a staff member from the station around if help is needed.
The track it is on is a standard gauge track, which Interlaken Ost station is the terminus. Thus I am sure it will be the only one on that track. Check at www.sbb.ch.en your travel day to get what track it will be on. Sometimes it is on Platform 8 which is on the same platform as Platform 7, just the opposite side and use the same access ramp and stairways. There should be a conductor standing there who will conform your train.
Here are some ways to identify your train in Switzerland, this will help you even if there is no train staff on the platform:
Platform Signs: Check the overhead sign on the platform. It will display which train is departing next.
Train Door Signs: When boarding, look at the sign by the door on the side of the train. It will show the destination.
Interior Monitors: Inside the train, monitors display the destination and list the upcoming stops.
The GPX train has a distinctive appearance, making it easily recognizable. Here is an image of its exterior:

First time travelling alone as a senior and is a bit daunting but ready for the challenge
Don't worry. You will quickly see how user friendly the Swiss train system is. There will even be a monitor, and announcements in the train to Interlaken telling you where the GPX will be.
Also a reminder that when you travel by train, there's no one to help with luggage (except for kindly strangers).
And in Europe there can be lots of stairs. Make sure you're not packing more than you can handle easily by yourself.
