I plan to visit Gimmelwald for 3 days then fly out of zurich to my next destination. Problem is my flight out of Zurich is at 7:30am.
Question is...should I leave Gimmelwald the 3rd night and stay in a Hotel in Zurich or can I leave early the morning of my flight and make it in time for a 7:30am flight????

I think you'll need to stay in Zurich the night before your early flight. Travel times on SBB are showing a journey of about 3 hours between Gimmelwald and Zurich, and the first cable car down from Gimmelwald does not leave early enough for you to get to Zurich in time—it leaves Gimmelwald at 6:00 am.

I agree with the previous reply. It's over a three hour trip from Gimmelwald to Zürich with 4 / 5 changes. The first departure from Gimmelwald isn't until 06:00, arriving Zürich airport at 09:16. Therefore, you'll need to stay in Zürich the night prior to your flight.
You might consider staying at Hotel Walhalla, as it's virtually right next to the Hbf. The train ride from the Hbf to the airport is only about 15 minutes (if that). Try to arrive in Zürich about mid-day, so that you have a bit of time to look around.
