Is 1 hour enough time to get from GVA (via Chamonix bus) to Geneva Cornavin train station to catch a TVG train to Avignon?

Yes. The train from Geneva airport station to Gare Cornavin takes 12 minutes.

There are trains from GVA to Geneva Cornavin at 7:40, 8:01, 8:05, 8:19. All take 7 minutes, so you should be able to make an 8:41 TGV to Avignon.

Which bus are you taking? Many of the buses to/from Geneva also call at the Gare Routière (rue Mont Blanc), which is only a block away from the Geneva main station. Would avoid the detour via the airport.
