Is it possible to obtain euros from a Swiss ATM or will they only dispense CHF?
I heard there was one at Zurich airport, but I did not look for it. Would be handy if you were going directly to Germany or Austria. Otherwise CH is the coin of the realm there. Might also be one at Geneva airport, as that airport is shared with France.
Quite a few UBS ATMs have the option to get euros. Look for machines with signs for EUR on them. You can also search their location website - filter for “Bancomat with euro”

Just be aware they mainly give out 50 euro notes, which can be annoying to break. And if you are buying things in Switzerland, avoid using euros.
Hopper - thank you. I see one here at the Geneva airport that appears to offer euros - https://www.ubs.com/locations/switzerland/cointrin/aeroport-de-geneve-cointrin/ubs-branch-257.html
Yes, haven’t been in a while but if I remember correctly there is a big wall of UBS ATMs there in the main hall near where you enter and at least a few of them offer EUR. Just check for the machines that have EUR indicated on them.
It's often annoying to try to break a 50-euro note in Italy. I've taken to withdrawing 40 euros at a time to assure that I never see a 50-euro note. I have no-fee ATM cards and have so far been able to find no-fee ATMs, so it doesn't cost me extra to make multiple, smaller withdrawals.
