Hi. I know that this is a long time from now but we are planning a trip to Switzerland for May 2024. We will be staying in Lucerne due to it having more vegan food options and would like to take a day trip to Lauterbrunnen and Wengen if possible. We will only be in Switzerland for 2-3 days. Looking for recommendations for any tours there or the best way to go about doing this. Any tips would be greatly appreciated.

two to three days is is a pretty short stay for a full day day trip. I'd stay in Lucerne or go to the Berner Oberland.
As a person who eats vegan you surely know better which place has more suitable food options. But I'll say that in the mountains in Switzerland there are abundant chalet apartments. Apartments might be the most common place people stay. So getting a place with a kitchen is really easy. The fresh foods and prepared vegan options in Swiss markets are quite high quality, and Swiss restaurants are really quite expensive. So you could easily rent a place with a kitchen and eat well at "home" like many tourists to Switzerland do. And then go hard at the restaurants on the next leg of your trip :)
Oh yeah, IMO BO > Lucerne, but there is no loser between the two.
Regarding vegan options, for just 2-3 days you might find enough options in Interlaken. No direct vegan experience, but as someone who does not eat meat I find Switzerland to be quite vegetarian-friendly. More so than at home in France.
Otherwise, great advice above about getting an apartment. It would solve your troubles.
Swiss restaurants are pretty goo at vegetarian meals, but not vegan. Cheese and milk and butter are ubiquitous. You will be much better off with an apartment so you can make your own meals.

You can take a train from Lucerne to Wengen that takes 2h36min. Look at sbb.ch/en for a schedule and pricing. The site assumes that you have a half fare card, so double the price if you don’t. The train will go through Lauterbrunnen on the way to Wengen.
Take the train and get up and go early. Once you've enjoyed Lauterbrunnen and Wengen you can even take the cable car up the Männlichen and then do the fabulous hike down to Kleine Scheidegg. From there the train will take you back to Wengen and onward to Lucerne. Great and possibly long day trip! BTW my daughter just moved to High Point.

Just FYI, the trail from Männlichen to Kleine Scheidegg generally does not open until mid-june. As your trip is in May, I would not plan on this as an option.
