how will be the climate in London Paris and Switzerland in August

I will be in each of those and, with respect, I don't have a clue.

Could be wet or dry, absurd baking heat or colder than normal.

This has been a wet and cold spring - could be anything in a week let alone in 3 months.

All the old expectations have all gone out of the window.

When traveling north of the Alps I used to worry about chilly, wet weather in mid-summer. Except for Switzerland (haven't been there recently) I'd now worry more about running into a heat wave, though a cold snap is still possible. It's more unpredictable than it used to be.

You'll need to substitute your actual destinations in Switzerland for Lauterbrunnen. Don't just look at one year. Use the pull-down box above the graph at the right to change the month/year. I like to check the most recent five years.

The Wikipedia entries for most cities have climate-summary charts that will give you monthly average data on precipitation and hours of sunshine. I use those a lot when worried about rain. However, you need to take a look at the date range on which the averages are based. Some cut off in 2010; others, as early as 2000. Weather has gotten wackier, so that stale data may be fairly off-base.

We will be in Murren and Zermatt in late July/early August 2023.

Is a temperature range of 50-80ish degrees (F) a reasonable assumption? (Just wondering how many seasons to pack for. ;) Thanks!

In the Bernese Oberland we have two seasons. Summer and Winter. And every day the weather gods decide if its going to be Summer or Winter....

Ok. I exaggerate. But the weather is very variable, and very local. If you do not like the weather, just do a few steps backwards or forwards. Ok. I'm exaggerating again :-)

Currently we are having typical summer weather in the mountains. Days start cool, with blue skies and a lot of sun. Then it gets nice and warm. Then late during the day clouds increasingly appear, and late afternoon/ evenings we often have showers and thunderstorms. It then cools down quite a lot. These showers are sometimes very localised.

So bring layers. I am now mostly wearing shorts and t-shirts, but will take a rain jacket on hikes, and in the evenings I put on a jumper or something.

In general you are fine in t-shirts in the sun. The moment the sun is gone it gets chilly. Going up it gets colder too. On the Jungfraujoch it is still snowing, so dress accordingly there.
