I am flying into Zurich and will arrive at 10:40am. I am making an appointment with the SBB office to help me with train travel. How much time does it usually take to clear customs? I want to be sure I don't miss my appointed time with the SBB.

This can vary so much--how many planes land at once, how many lanes are open, etc. Zurich is in general very efficient, but I would not venture a guess for fear it could go wither way. Do you have to get luggage as well?
If you still need help from SBB, very good call to make an appointment as the walkup line was long. But are you sure you can't sort out your train travel with help from the forum? That's what I did. I just used the app and was on my way on arrival.
From a transatlantic flight, it usually takes me 30-40 minutes max from plane landing to me exiting the customs area, including picking up luggage. From a European flight, more like 20 mins. I know my way around the airport and walk fast though. Then you have to walk to the SBB office, so give yourself at least an hour. If you have extra time for a bathroom break or grabbing a coffee, not the end of the world.
Of course, if you have a Schengen passport, it goes a little quicker, but I don't think I ever spent longer than 10 minutes getting my passport stamped. This past January as the first time I have ever gone from a bus exiting the plane directly to passport control. If you made a noon appointment, I think you would be safe. You can spend any extra time in a coffee shop relaxing.
