Between Zurich and St Moritz.

We will be doing a portion of the Swiss Grand Tour beginning in Zurich and heading north and East and ultimately south toward St Moritz where I have a previous appointment. We have three days and two nights between Zurich and St Moritz. I have compiled a list of things to see and do (always looking for additional suggestions). I wonder if someone here can recommend the two towns we should stop in overnight. (St Gallen? Apppenzell? Others I would have never heard of?) Don't let the St Moritz mislead you- we're not fancy folks/

Instead of staying in St-Moritz, consider nearby Pontresina instead. Charming town.

St Moritz is built in and out of my control.
Question is for places to stay before we get to the Engadine

Appenzell is a very good idea, perfect for 2-3 days. Make sure to get up to Säntis and to Ebenalp if you go!

EDIT: I re-read and see you mention "two towns", but with 2 nights, I would just pick one town. If you must stay in 2 towns, then Chur, suggested below, would be a good #2; the old town there makes for a pleasant visit.

Chur is the logical stop between Appenzell and St Moritz. From Chur to St Moritz travel via "Filisur" to use the Albula Railway over the famous Landwasser Viaduct and several spiral loops.
