We will be spending three nights in Wengen in September at the Edelweiss, and I'm wondering... Schilthorn? Jungfrau? First? Hiking down to Lauterbrunnen? Best restaurants for local food? Any traditional music to hear? Thanks for your thoughts!!

All of these are doable, weather dependent. Do you have specific questions about each?
Jungfrau is closer. Check the weather and webcams before spending the extra money to go up to either Jungfrau or Schilthorn.
I would check the weather because you will want a period of clear skies to enjoy either the Jungfrau or Schilthorn. I would tend to say Jungfrau, first, since you’re on that side of the valley. Mannlichen to Kleine Scheidegg may still be okay when the others have a little cloud cover.
For restaurants, we just tried to go with cheaper food in Switzerland, so I don’t have any memorable recommendations.
If you end up with a dreary weather day, don’t miss the Trümmelbach Falls internal waterfalls.
Most eat breakfast at the hotel, cafeteria style for lunch while touring or hiking the mountain areas and dinner at the hotel. Moreover the mountain excursions are expensive so you make decisions on where to go the morning of based on the weather conditions. You have the most success visibility wise in the mountains the first ascent early morning. Wengen is pretty quiet resort town after 6.
