We want to ride the Bernina Express. We will be staying
In Davos and don't know where to catch BE from there. Do we need to go all the way back to Chur or is there a quicker/ easier way? Will we miss too much if we don't catch the train in Chur?

As I recall, you won't miss much between Filisur and Chur, but there are some interesting sights between Filisur and Tirano, including the Brusio Circular Viaduct which is close to the Tirano end.
I haven't checked the schedules, but you should be able to take the regular train from Davos to Filisur and then connect with the Bernina Express. After riding the B.E. to Tirano, you could return to Davos by regular train, but that trip is going to be about 3.5 to 4 hours.

Just take the train from Davos and change at Filisur for the train to St Moritz and you can catch the Bernina express there (or at Pontresina, a short train connection away). The only thing you will miss is the Landwasser stone viaduct, which you will miss anyway if you blink. No point adding 3-4 extra hours to the journey. If you time it right, you'll pick up the Bernina Express in Filisur.
