Is there a long wait to check luggage at a train station? Or do you just get lockers?

IF --- luggage storage is available then it will be checked in and sometimes x-rayed by staff. Impossible to predict length of lines -- it just depends. Many smaller stations do not have luggage storage. And lockers are a thing of the past. Too convenient to lock your bomb in a locker. Check the station's web site to see if luggage storage is available.
Are you talking about leaving luggage at a station, that you come and pick up later?
Not all stations have luggage facilities. For some stations you can look up the station name and see if it has any the SBB website page here: https://www.sbb.ch/en/station-services/railway-stations/further-stations.html
That list only shows SBB owned stations, not other railway companies.
Luggage lockers are more common, these are accessible at any time the station is open. Manned luggage counters are rarer and have limited opening hours. You shouldn't have to wait.
Frank: Have things changed since last summer (2017)? We were in Germany and France. In many stations that we visited there were hundreds of lockers. Munich, Berlin, Frankfurt, Leipzig, Hannover - plenty of lockers available.
Costs were not huge and the lockers were easy to use.
We used lockers last year in Basel, Lauterbrunnen and Interlakken. Easy peasy.
Maybe they are still around, our last two trips were in Italy and Greece and I do not remember seeing any lockers. But since this question is under Switzerland, perhaps Switzerland has not dropped the locker.
There are plenty in Switzerland, both lockers in larger stations and, in the really big stations manned luggage counters.
The only country I know where there are absolutely no lockers is the UK, and that since the 1970's when the IRA discovered they were great for leaving bombs in. Other European countries have them, but only in larger stations. There is no call for them in small town stations.
In most cases you won't notice them unless you look for them.
Yes, Italy only uses luggage storage rooms at large city stations. Same deal, security concerns.
Zurich Hbf has lots and lots, all sizes.
