I have been trying to purchase train tickets on Rail Europe for Stockholm to Oslo for May 1, 2018. Tickets are "unavailable". Tickets can be purchases for June 2018 but not May 2018. Does anyone know why?

Who knows maybe the schedule is not finished
I would use the Swedish Rail site anyway instead Rail Europe

I'm not lobbying to be your travel agent, but I looked into "alternatives" - you can fly on SAS for $78 on May 1 or take the 5 hour train. Flight time 38 minutes wheel to wheel.
The Oslo airport is much nicer than Stockholm's, in my opinion.
Do keep in mind - you would need to get to and from each airport - and neither are near the central city, but express trains wisk you to and from with rapidity.
