My husband and I will be in Stockholm for five days this August. We are avid cyclists and would like to see some of the countryside (islands perhaps?) by bike. We would like to rent good road bikes for the day and do a long--like 100k--ride.
1. Does anyone know of a good shop that rents road (racing) bikes?
2. Any suggestions on routes?
3. Know anyone who would actually want to guide us so that we don't have to follow a GPS route on our phone mounted to our handlebars?

There are plenty of opportunities, but if you are looking at renting road bikes and do a 100 km trip the islands are not the best options. Few of them are large enough to make a 100 km trip possible. But if you are looking for a shorter trip, bikes are a good way to explore many islands.
For a longer trip, my suggestion would be to start by getting out of Stockholm a bit, where there is less traffic on the roads.

I have no experience but by using two ferries it is possible to do a loop over some larger islands and see some water at least occasionally. This is just an idea without researching the exact roads/bike paths to to use: https://goo.gl/maps/oekncWM3DXR55vAx7
I also added a detour to Tynningö, but that ferry isn't that frequent, every 20-40 minutes and a 60 min lunch break. (https://www.trafikverket.se/resa-och-trafik/trafikinformation/farjetrafik/tynningoleden/). Just do other detours instead if that is a problem for you.
The Vaxholm route is fine indeed. You should also check the Ekerö route, its quite nice also. A plus with the Ekerö route is cycling past Drottningholm (residence of the king). Have a nice trip!
