We planned our trip before it was announced, but coincidentally the Jacksonville Jaguars are playing in London while we will be in Stockholm. Does anyone in Sweden actually care about the NFL? We are from Jacksonville so it could be cool to catch some of the game at a local watering hole with some local football fans.

There is no shortage of football fans in Sweden. But remember that football is a sport where you kick a ball (i.e. a spherical object) with your feet 😀
To answer the question Does anyone in Sweden actually care about the NFL?, I'm sure some do but don't expect it to be many. I had to google "NFL", that might say something about the popularity. Although I'm not a huge sports fan. You might be able to find some place showing the game, but it also depends on when the game is and if there is some more popular sports event at the same time.

I have watched NFL a few times at the the Hard Rock Cafe in Stockholm. Not normally a place I go to, but was the only place we found regularly showing games and when I’ve been, there were plenty of local NFL fans watching. It’s near Odenplan subway stop, not far from the central station. Their social media usually posts confirmation of games they will air or you could contact them to make sure before you go there.

Another option to check would be O’Learys, a Swedish (but Boston-themed) sports bar chain. There are a few locations in Stockholm and I imagine they probably show NFL too, though I can’t guarantee anything.
