We are stopping in Karlskrona on our cruise. We only have about 7 hours. What do you recommend to do? We will be there the first week in September.

It's a cute town so worth seeing just for that reason. It's on the Unesco world heritage list and was once the 3rd largest city in Sweden. It has been said that king Karl XI intended to move the capital from Stockholm to Karlskrona and for that reason Karlskrona was built to be an impressive future capital city. I don't know if that's true, but there is no doubt that Karlskrona is impressive. The Naval museum can also be a good place to spend a few hours.
And if you're arriving by ship, keep in mind that it's illegal to take photos of the city from the water.

The bistro at the naval museum has a lunch buffet with some traditional dishes, so if you want to taste some regional food that is good spot for lunch.
