There seems to be several different canal / boat ride options going to different locations. ... Royal canal, under bridges, hop on/ hop off boat etc. Does anyone know which might be better than the other.?

Strictly speaking there aren't really any canal rides as there are very few canals in Stockholm, most of it is natural water.
But, better is a subjective term. What are you looking for? There are also a couple of SL-ferries that will give you a view of the city from the water.

Good thought. SL-ferries might be more convenient (more frequent) and part of the SL transit pass that I'm considering.
In your opinion, which routes might give a good perspective of the city from the water?

Djurgårdsfärjan, Djurgården-Slussen, is a good option if you just want to see the city from the water. And regular SL tickets are valid. But if you want more of a sightseeing trip there are several options. The main question is then how much time you want to spend on it and what parts of the city you want to see. A dinner cruise can also be a nice way to see a bit of the city from the water.
