I am 60 years old and finally will be able to do my "semester abroad." Can anyone recommend any adult programs for language immersion for either Italian (in Italy) or Spanish (in Spain).

Haven’t traveled with Road Scholar (no thanks to 2020!) but they offer long stay (about a month?) language programs in Spain and Italy as well as France I believe.

My husband went to the Lucca Italian School and enjoyed it very much. You might want to try selecting a city or town you find interesting and Google search from there.

Are you looking for something that includes accommodations? If so, and as mentioned above, Road Scholar offers this in both Italy and Spain. The package is for 45 days, includes lodging and starts at $10lk. That said, I'm not sure how much language you get, and if you're really looking for an immersive experience, you might want to check other places. There are hundreds of them all over; some more well known than others.
My daughter taught English at (and took Spanish lessons from) EF in Spain and loved the experience. It's a reputable organization that has been around for a long time. I'm not sure if it includes accommodations, but I'm sure they help with that.

I know that your preference is Italian or Spanish, if you don't find something that works for you in those languages, I have an option for you for French. I listen to "Join Us in France" podcasts. They are excellent. The woman that started it has a "boot camp" in Toulouse, France, that seems to be quite popular. They work on the language and visit sites and restaurants in the area.
