I am about 50 yrs old and I will be backpacking it with my 20 yr old niece. She wants to stay in Youth Hostels and I have no problem doing that also. Can you recommend a youth hostel in these cities that don't have a curfew, maybe have a room for us two alone, and close to the sights? Thanks.

Rick's Spain book does now list more youth hostels/dorm beds than it used to, for instance several in the Barcelona chapter, including www.equity-point.com. However, other pensions/hostals/small hotels listed in Rick's books still offer a simple, private room with bath down the hall at a competitive price, such as www.hostalolivia.com.
