At what time of the year? How much time will you have?
I see you've posted in the France forum as well. How do you plan to move between the two countries?
All the places you list under Option 3 could be very hot if your trip is mid-summer.

In Valencia you have the aquarium and the bioparc if that helps. Park Güell in Barcelona is really cool. I'm not familiar with the other locations so I can't really help with that.
