I will like to stop in the middle (more or less) in a nice town or village to have lunch walk a little to stretch legs and then keep going ...
Where is a charming place to do a quick stop?

Almería or Murcia are worth a stop. For a more scenic location, maybe have lunch at the Parador in Lorca. It’s right next to a castle, up on a hill.
If there’s time, from Almería head north for a quick visit to the tabernas desert. A number of the old spaghetti westerns were filmed in and around the Tabernas area. Another location worth stopping at is El Palmeral, just south of Alicante.
Cartagena is an interesting town, with a Roman amphitheatre overlooking the leisure and naval port. There is a nice restaurant at the top of the ruins, with a great view.
