We are getting ready to travel in Spain and will be flying Vueling Airlines on one leg of the trip.
I just realized that the hand luggage (carry on) depth of 20cm is very small and not what I expected. I realize I should have been more through in my investigation, but I wasn't. Do they really monitor the dimensions? Is there a way to on online and sign up for additional bags for checking?

Yes they do, that is a revenue stream and the two times I have flown them the flights were full. You can add pay for the bag at their online website.
