We are stopping in Vigo on our cruise from 9 am - 5 pm in mid June. There is no listing for Vigo in his Spain tour book.
Looking for recommendations for while we are in port…open to many things.

Fantastic. I’ve been wanting to go back to Vigo just to visit this restaurant. When I last visited, I went twice in two days.
The major site within a short distance of Vigo is Santiago de Compostela, the pilgrimage ending for those walking from France and other locations. One of our favourite places to visit.
Other places near Vigo are Baiona where Columbus' ship Pinta returned to from the New World.
Also look at Pontevedra.

I found Vigo itself not very interesting compared to other Spanish cities. I would absolutely get out of town and agree that Santiago de Compostela has the most to offer. Pontevedra (much closer to Vigo) is also attractive, but I think there will be plenty to keep you occupied in Santiago de C. There's train service from Vigo to both cities--plus also bus service if the timing of the trains isn't convenient for you. Vigo has two train stations, so be sure you head for the correct one for your destination.
You can check train schedules on the Renfe website. I see that travel times between Vigo and Santiago de Compostela vary a lot and there don't seem to be a lot of fast outbound options in the morning. Sometimes fast trains sell out early, so you might be smart to get tickets in advance after doing some research on what would be a reasonable departure time, given your port schedule. This is not a port call I'd want to leave unplanned, because Vigo is really not much of a sightseeing destination.
At a quick glance, bus companies serving this route seem to be MonBus, Flixbus, ALSA and the Portuguese company Rede Expressos. MonBus has the most departures. You can check its schedule here. For some reason I cannot get the input form to accept Santiago de Compostela as a destination, though it works as a departure point. Obviously, the buses run in both directions, so I searched for a round trip from Santiago de Compostela to and just looked at those results.
I've used Spain Day Tours for port stops. I see they offer two options from Vigo, one being Santiago de Compostela.
If you’re into Celtic ruins then Castro de Santa Trega is a nice stop. Because it’s way up on a hill, one gets some great views of the surrounding area. It could possibly be combined with Baiona or Tui. I have no idea if there are tours to it from Vigo since I normally have a rental car.
I am taking a cruise in October and will also port in Vigo. I have signed up for the excursion to Santiago de Compostela.
Have you ever seen the movie The Way with Martin Sheen?
I want to visit and maybe attend a service at St James Cathedral. Maybe I will get incensed.
I suggest doing some research on The Way movie. Do some research on Santiago de Compostela. Do some research on St James and St Jame Cathedral.

@bostonphil7 - if you want to go to a service in the cathedral where they swing the incense burner, you need to attend the daily Pilgrim’s mass. There are 4 masses a day, but I believe the burner is only swung at one of them. Back in 2017 we made an itinerary based primarily on the filming locations in “The Way” and “Ocho Apellidos Vascos.” We drove all the way to Muxia where Martin Sheen threw the remainder of his son’s ashes to the ocean. Great trip. The second vacation Iink is only places on the Camino.
@bostonphil7, we are going to go there from our stop in La Coruna. Better time available to make that trek. Vigo, I think we have decided to explore.
There are trains from Vigo to Pontevedra taking as little as 13 minutes.
I am also going to port at La Coruna and have not yet picked my shore excursion. Maybe I should look into Santiago de Compostela but I am not certain that an excursion was offered.
I believe that I did some research about Vigo and there does seem to be plenty of options.

Update: Went back to my cruise and Santiago de Compostela is not offered for La Coruna. My cruise is not until October and more excursions will almost certainly be loaded.

I have signed up for the excursion "Santiago on your Own" but I believe that I may only have 3 1/2 free hours in Santiago. Definitely enough time to explore St James and maybe walk around. I believe the entire excursion is 6 1/2 hours.
We are planning on doing our own trek to Santiago from La Coruna, not using a cruise line excursion.
