Rick's guidebooks will often (not always) include a vegetarian restaurant among the recommendations. One that he mentions in Madrid is Artemesia II at Tres Cruces #4, 2 blocks north of Puerta del Sol.

I had no trouble getting vegetarian food (with eggs and dairy) last year. I traveled in Madrid and through much of Andalusia. There were lots of vegetable dishes to choose from and most of the cooking is done with olive oil.

If you don't mind Indian food, I found the Indian restaurants in Madrid had lots of vegetarian dishes.

Also most restaurants will have at least one or two non meat dishes/tapas. The tortilla de patas(Spanish omelet with potatoes was a particular favorites as was some of the asparagus dishes.

Just to add, in my 24 days in Spain, I ate only in places serving local cuisine. That being said, I did often shop in groceries and supermarkets - sandwich components, salads, snacks, etc., especially for lunches buy sometimes for picnic suppers too.
