We have been to two flamenco shows. Seville and Granada. One at a Flamenco school. Neither one was very crowded.
Note that Flamenco for tourists is the way it has always been. Authentic flamingo is just that. Unless you go back in time 100 years to a family gathering in some tiny town, flamenco has always been a show for others. The caliber of dancing is great. You will see men and women, together and solo dancing. Everyone thinks of the dancing, but the guitar and the singing are a big part of it too. There is a small flamenco museum in Cordoba that is devoted to the music of the flamenco. Headphones, etc to listen to various evolutions of the music. Very complex.
You probably will not go wrong picking something that is convenient to you. Valencia is not the home of flamenco. However, it is the home of paella. Most suggestions will be by people who have only been to one or two shows. So how to know the best unless you have been to a lot more than that?

but I'm traveling to see friends in Valencia!!! I will choose one. I'm hoping someone had a favorite in Valencia as I know I have my faves in other cities.
