We are flying in and out of Madrid plan to take speed train to Barcelona then.. rent car? train? to Granada/Cordoba/Seville/ Pueblos Blancos... would love recommendations/thoughts. Thanks

ARRIVE Madrid & train to Toledo
Train to Seville - visit Cordoba (Mezquita)
Pick up car & drive to Jerez
Drive via Arcos to Ronda - visit pueblos blancos
Drive to Granada & return car - visit Alhambra
Fly to Barcelona
Train to Madrid
DEPART Madrid

Or reverse of suggested itinerary. Jerez is an option, but you don't mention how many days?

David's itinerary is good. But, how long is your trip, and what time of year? That will influence the recommendations.
