I use www.loco2.com to book trains in Europe. Its a user friendly site, offers the same tickets that Spains Renfe site offers with no mark up- you can create a free account- print at home or mobile tickets- pay in dollars or euros or pounds- just put in Barcelona to Valencia and your dates its very easy.

You can go to the RENFE website and enter an origin of "Barcelona (Todas)" and a destination of "Valencia (Todas)". The site will show you your options. Click on the "+" to the right for one of the trains and you'll see some details, including the specific departure and arrival stations. All the fast trains seem to depart from Barcelona-Sants. Some go to Valencia-Joaquin Sorolla and others to Valencia-Estacio del Nord. So you have a choice as to where you arrive, and you can make the choice of the basis of which station is closest to your Valencia hotel. Or you can take the train that departs at the time you prefer, irrespective of the station it uses, and take a taxi to your Valencia hotel. The trains to Joaquin Sorolla appear to make fewer stops than those to Estaction del Nord and are a bit faster.

There is some variation in the fares for the various trains, and you may save money by buying Promo tickets well before your departure date. Those tickets can and do sell out, but they are non-refundable/non-changeable, so you must be very sure of your travel plans before you purchase a Promo ticket.
