My husband and I will be staying in Granada for 5 nights at the end of September and early October. We would like to take a day to visit the hill towns like Ronda and another day to explore some coastal towns like Marbella and Malaga. What is the best way to do this? Trains don’t seem to run as quickly and frequently as they did when we were in Italy and France.

No, it is more a case of Ronda, Marbella, and other hill top towns not being well connected by train from Granada and RENFE (the national railroad of Spain) not posting the train schedules as far in advance as the railroads Italy and France
You can get to Malaga easy by taking the bus, you should rent a car to get to Marbella and Ronda and the other hill top towns.
To get from Granada to Ronda via bus one would take an ALSA bus from Granada to Malaga (make sure to get off at downtown station not airport), then take an AVANZA bus from Malaga to Ronda. First leg scheduled to take 1 hr 45 mins, second leg 2 hours. When we took this route last month, quite a stretch of the highway had a lane closed, which got us to Malaga later than scheduled, thankfully we had some "layover" time built in, so we were able to make the Ronda bus without a problem. If you leave early in the morning and plan to leave Ronda late in the evening/night, then you'd be able to spend some time exploring Ronda. We spent two nights in Ronda--it allowed us to do a lot of walking/exploring and also provided some down time for us.
